Our program comprises two days of WSET level 2 and three days of GUEST program certified cocktail and spirit education.
Wine, Cocktails & Mixology
The first two days of the program will focus on the Wine Education Trust (WSET) level 2 course. This internationally recognized qualification is designed to provide a comprehensive understanding of wines. Our expert instructors will cover a range of topics, including the basics of wine production, wine styles, and grape varieties. Participants will also learn about the principles of wine tasting and food and wine pairing.
The next three days of the course will focus on the Guest Program Certified Cocktail and Spirit Education. This program is specifically designed for those in the yachting industry and covers everything from basic cocktail preparation to advanced mixology techniques. Our instructors are industry professionals who will share their knowledge and experience with you, covering topics such as the history of cocktails, bar set-up, and customer service.
Throughout the course, participants will have the opportunity to taste a wide variety of wines, spirits, and cocktails. Our interactive and hands-on approach to learning means that you will be able to apply your newly acquired knowledge immediately.
At the end of the course, participants will receive a (on successful completion) WSET Level 2 in Wines Certificate and a GUEST Program Certificate, both of which are recognized globally and highly valued in the yachting industry. Our course is an excellent way to kick-start your journey into the world of yachting, or to elevate your existing knowledge and skills.

Bartending
Cocktails have a long and storied history, full of exciting twists and turns. We’ll lead you from the early days, from their early days until the modern day. You’ll pass through the major cocktail eras, exploring their recipes, ingredients, styles and flavours.

Learn the tools of the trade! Bartender training involves all sorts of equipment like jiggers, different types of bar spoons, shakers and strainers, as well as a range of glassware and all sorts of products from spirits to garnishes.
You’ll dive into the essential equipment, as well as some of the more advanced pieces of kit we use to make amazing cocktails. We’ll discuss the major spirit categories, talking about where they’re from, what they are made of and how they’re made. Plus we’ll cover the importance of quality ice, what the purpose of ice is in a cocktail and why certain types and shapes of ice are important.

Mixing drinks is the name of the game! You’ll learn the principle techniques you need to make cocktails, from stirring to shaking to rolling, as well as which method is most suitable for different drinks. We’ll show you different ways to shake cocktails and how different types of shakes and shakers affect the cocktail. You’ll practice how to stir a drink properly to get it perfect every time, as well as different mixing techniques that you can use instead of stirring.
You’ll also get an understanding of how to pour, garnish and serve drinks correctly, whilst also learning about the importance of a cocktail’s appearance and how to excite the people you are mixing them for.

Tasting sessions – an absolute essential for a cocktail class. This is why we recommend you leave your cars at home for this course! At the end of each day of the course we’ll jump behind the bar to give you a full tasting of the cocktails that we cover on the course.
You’ll get a chance to show off what you’ve learnt and make cocktails for you and your classmates, making and tasting around 20 drinks, from classics to modern day marvels. You’ll see first hand how your technique and precision affects flavour, how balance works in cocktails as well as how to use ice to change the dynamics of a drink. Plus you’ll learn how to taste thoughtfully and recognise flavours.

Mixology
There is a vast difference between using a pre-bottled product and making your own from scratch. This is the basic principle of Mixology, the culinary art that separates an everyday cocktail from the craft cocktail.
In our mixologist training we’ll guide you through how to properly cook and create mixology recipes, with insights into measurements and scaling, how to handle different products and what flavours work well together. You’ll create your own products, such as purees, foams, syrups and cordials and learn how to extract the most flavour out of your ingredients. Then you’ll see how we can use these delicious products in delicious cocktails!

Classic cocktails are the foundation of cocktail culture but craft cocktails are where the creativity comes to life. By taking all you learnt from the mixology part of the course, we’ll start making them into craft cocktails, bespoke drinks that allow new and exciting flavours to shine.
We’ll go from twists of the classics, to elevated to twists to signature cocktails. Through this process you’ll begin to understand how to design your own cocktails that express your personality through flavour.

Wine
The world is full of hundreds of different grape varieties, but only some can be used for wine, and some are more common than others. You’ll learn about some of the principal grape varieties that are considered the most prolific and discover their unique characteristics, flavours and wines that they can become.
Not all wines are created equally! Together we’ll explore the key styles and differences between wines. We’ll also begin to learn how different factors like environment, grape growing methods and maturation can affect the final product in terms of style and quality in wine produced around the world.
The world of wine is characterised by vast regional differences, with unique climates and environments massively affecting the wine they produce. You’ll explore over 70 different regions with geographical indications, with insights into their unique ecosystems, wine-making techniques and products.
Tasting wine is a fine art that requires lots of training. This wine course gives you the basic tools and practise you need to begin understanding the complex flavours in wine and training your palate to be able to recognise them using the WSET Level 1 Tasting Structure
Two things that have always gone hand in hand are wine and food. Pairing them perfectly requires a good knowledge of how different flavours work together. You’ll discover how each of the main flavour types interact with each other and which flavours tend to work best with others. By understanding that framework you’ll be able to apply it to wines and find the perfect match for the food you’re tasting with it.
The storage and service of wine is essential to great wine experiences. If you’re starting your journey on the road to sommelier or simply want to maintain and express the best quality of the wines you love, this aspect of the course will help you do just that. We’ll go over all the best practices for storing your wines in the correct way, as well as all the tips and tricks for serving the liquid we love perfectly every time.
