Join our Mallorca Wine & Cocktail Club. We will be tasting wines, understanding food pairings, learning how to make homemade cocktail ingredients and shaking up your own cocktails on the day. All of this with the aim to create a local community of like-minded, flavour-loving individuals!

11th May - Introduction to Natural Wine
Time: 6pm – 8pm
Join us as our resident sommelier walks us through what is and is not natural wine and the myriad shades and flavors you’ll experience. We’ll be enjoying wines from Mallorca & beyond!
8th June - Mallorcan Craft Beer
Time: 6pm – 8pm
Craft beer arrived in Mallorca a little over ten years ago and wow, the suds just keep getting better and better! The island may only take a few hours to bike across, but name a style and likely someone is crafting it here. IPAs, Stouts, Lagers, beers with local ingredients like carob & basil, Pale Ales and so much more! Word on the street is someone’s even growing hops here! Sign up today to sip our beautiful island’s delicious beers while learning about the history of craft beer in Mallorca.

In this session we will be deep diving into some of the best Gin cocktails around. From long and refreshing to some more boozy and short styles there is surely something for everyone. This one is for all the Gin lovers out there!
TBA - Wine Journeys with Gabriel Lucas Dimmock, Spain's #1 Sommelier: Syrah & Semillon
Time – 6pm – 8:45pm
Come and sample specially chosen wines showing a typical French style and compare them with New World Australian wines and Old World Spanish wine using the same grapes.
This session has been put together to really showcase the versatility of the grapes and how the differing climates and winemaking techniques can bring out the best versions of these wines!
Which will you prefer – the French versions or the other versions? Each evening we will finish voting for our favorites and you may be surprised!
TBA - Wine x Cocktails w/ Vins Ripoll
Time: 6:00pm – 9:30pm
In this special fusion event we will bring to light the best of both worlds!
Firstly in this collaboration event we will start off with a tasting with Miguel from Vins Ripoll. While being guided through the local grape varieties and styles you will be tasting some delicious local wines from his winery. During this session we will also offer some tapas of local ingredients to pair with the wine!
Once we have warmed up nicely we will head over to the mixology station and have a bit of fun while learning how to make some homemade ingredients, using some of the wines we have just tasted.
Finally we will get our hands dirty and shake up some delicious cocktails! A perfect way to round off the evening. This evening will be sure to be fun, educational and full of delicious food and drink. See you there!

In this session we will be sailing the high seas and throw together some delicious Rum concoctions, from fun and eccentric tiki drinks to some more serious serves. This is a great way to explore some of the less mainstream rum cocktails you can find!

Wine drinkers today can find many Cabernet Sauvignon options in the market. Some Cabernet Sauvignon wines are sumptuous and fruity, others are savory and smoky. It all depends on where the Cabernet Sauvignon grows and how it’s made into wine.
Chardonnay is the world’s most popular white wine, and for good reason. It’s made from green-skinned grapes that adapt to a variety of climates, and they produce versatile wines. Chardonnay can be crisp and clean, or rich and oaky.
In this seminar, we taste examples of these popular wines and look at how where they’re grown affects their characteristics.

In this session we will only be making ‘Martinis’. They aren’t all just boozy sippers as our slick secret agent friend would suggest. From Espressos to P**nstars, this category gives you the tools to be a showstopper at any given house party!

We have the pleasure of hosting a special series of tastings with Gabriel Lucas Dimmock. Taking us on a journey of wine, deep diving into what makes our favourite liquid so special!
Originally from Palma de Mallorca, some of his accolades include teaching at multiple different schools of hospitality and wine as well as being educated in a number of different fields from Sake to Sherry. Gabriel has been regularly competing in some of the toughest competitions out there, culminating in a win as the best sommelier in Spain last year.

The Drink In Academy was set up in 2012 to give young and aspiring bartenders the training they need to step behind any bar in the world with confidence. Since then we trained and brought thousands of students to become masters of their craft and brought knowledge to thousands of lovers of beverage.
We look forward to continue the journey with thousands of students to come at Drink In Academy in Dublin and Mallorca. We look forward to welcome you to our family and the journey of flavour.
